500 grams potatoes
1/2 tsp paprika
1 tbsp dried thyme
1 tsp rosemary
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp black pepper
1/2 tsp chili powder
1/2 tsp salt or to taste
1 tablespoon olive oil
1 tsp lemon juice (Optional)

Step-1 Start with washing your potatoes. Wash thoroughly as most of the time they are covered with a lot of dust.
Step-2 Dice potatoes into small cubes. They should be small and even in size.
Step-3 Soak the potatoes in cold water for 5 minutes.
Step-4 Take a bowl and make a mixture of ingredients. Add paprika, thyme, rosemary, salt, black pepper, garlic, onion, and chili powder. After thoroughly combining them, add the lemon juice and olive oil, and mix once more.
Step-5 Add diced potatoes to the bowl with the mixture of the ingredients and coat well.
Step-6 Place them in an air fryer basket and cook them for 10 minutes at 370 F. Give them a good shake and cook for another 10-12 minutes.

Tips & Notes
1-Cook the potatoes with skin, they will crisp well with skin on.
2-The smaller they are, the better they will cook. And dice them in uniform sizes for more even cooking.
3-Potatoes contain excess starch which increases the amount of carbohydrates. That’s why soaking them in cold water removes starch content.
4- Cook them in a single layer and shake them two to three times.

You can store leftover potatoes in your fridge. Simply pack them in an airtight container. They will easily last for 3-4 days. First, let the potatoes cool down completely then seal them in an airtight container or bag.
And reheating is as easy as a breeze. You can reheat them in a microwave oven or in an air fryer. Both types of equipment take the almost same time.
- For reheating them in the air fryer, place potatoes in the air fryer basket and reheat them for 2-3 minutes at 350 F.
- For reheating them in the microwave oven, put potatoes in an oven safe bowl or plate and heat them for 1-2 minutes.
How Long Do I Cook Diced Potatoes In The Air Fryer?
20-22 minutes are well enough to cook diced potatoes in the air fryer. But time may vary depending on the size of the diced potatoes and the specific air fryer model you are using.
For even cooking and crispiness, shake the air fryer basket or use tongs to flip the potatoes halfway through the cooking process. Check the potatoes for desired crispiness and tenderness, and if necessary, cook for an additional few minutes until they reach your preferred texture.
Can I Use Sweet Potatoes For This Recipe?
Yes, you can use sweet potatoes as well. If you are just like me and like the sweet aroma of potatoes, then go ahead and use sweet potatoes. Sweet potatoes work well in an air fryer and can be prepared the same as diced potatoes.
Can I Cook Frozen Diced Potatoes In The Air Fryer?
Yes absolutely. You can cook frozen diced potatoes in an air fryer as well. Below is the cooking process:
1-Preheat your air fryer to 400 F for 2 minutes.
2-Place the frozen diced potatoes in an air fryer basket and cook for 24 minutes at 370 F.
3-Shake the basket well halfway through and coat potatoes with cooking oil just 5 minutes before they are fully cooked for better taste and texture.
