These classic keto pancakes are so easy and delicious to prepare. You just need seven ingredients and an air fryer. You can cook them within 15 minutes including the prep time. No flipping is required; simply pour the batter into your air fryer and let it do the cooking!

How to Make Pancakes In Air Fryer

  • 1/2 cup coconut flour
  • 1/4 cup swerve, (or any of your favorite sweeteners)  
  • 1/2 cup heavy cream (or keto-approved milk of choice)
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla 
  • 8 oz Cream Cheese, softened at room temperature
  • 4 eggs (Medium size)

Step-by-step cooking guide for air fryer pancakes

Step-1: Gather the ingredients 

First, gather all ingredients in one place. All you need is coconut flour, cream cheese, eggs, baking powder, swerve, heavy cream, and vanilla extract.

Step-2: Time for blend

Take a blender and add cream cheese, coconut powder, eggs, heavy cream, and baking powder. Blend for 1 minute until the mixture is smooth. 

Then add vanilla extract swerve and blend for one more time for 15 seconds.

Step-3:Pour the mixture

Pour the pancake batter into the tins. You can add 1/4 cup of pancake batter into your pie tins.

Put the tin cups in the air fryer. Set the temperature at 400 F for 8 mins. As different air fryers have different power and capacity, make sure to have a check after 5 minutes to ensure it does not get overcooked.

Once done, take it out from the air fryer and let it rest for 2 minutes. Then serve with butter or berries.

Pro Tips

1- Use aluminum tins for cooking and for storage of pancake batter. The good thing about them is that they can be reused multiple times. Just give them a good wash after cooking, and that’s it.

2- For perfect cooking, make sure the pancake has a golden brown texture at the end of the cooking.

3- For thicker pancakes, you can use 1/2 or 1/3 cup size of batter. If you opt to do so, don’t forget to adjust the cooking time to 1-2 mins.

4- You can add some fruits to the pancake batter for a better taste. You can add bananas, strawberries, and raisin seeds. Simply blend them with other ingredients while preparing the batter.

This is a keto friendly recipe for air fryer pancakes. But there are other variations of pancakes that you can try. Among them, air fryer banana pancakes and air fryer protein pancakes are my favorite.

From classic flavors to inventive twists, you can customize your pancake creations to suit your taste. You can add ingredients like chocolate chips, diced fruits, or nuts to the pancake batter for extra texture and flavor.

You can also experiment with different types of flour, such as whole wheat or almond flour, to create healthier versions. For a touch of elegance, try making air fryer crepes filled with creamy fillings like Nutella and sliced bananas.

How to reheat?

Leftover pancakes can be reheated in the toaster or air fryer. Both are quite simple ways of reheating pancakes. You can toast them or reheat in the air fryer at 350 F for 2-3 minutes. 

Depending on your pancake size, make sure not to get the basket overcrowded. If you have more pancakes, you can reheat them in multiple batches.

How to store?

Simply place them in an airtight container and place in the fridge for 3 days. Don’t store over three days or they will go off. For longer storage, you can freeze them. 

How to freeze?

Yes, you can freeze them in an airtight container. For large batches, you can use wax paper between each pancake so that they don’t stick to each other.

Can you use parchment paper for air-frying pancakes?

No, it’s not a good idea. You would end up making a mess in your air fryer.

Cooking pancakes on parchment paper is not effective. Even if you try it, it’s going to be a failed experiment. Each TikTok video is not worth trying and considering.

So, stay safe and healthy, and don’t try it.

How to make pancakes fluffy?

There are various tips that are helpful for making pancakes fluffy. Some of them are:

Baking Powder: Baking powders are the leavening agent responsible for the fluffiness. They lose their effectiveness over time. So, for best results use a baking powder within 4-5 months from its date of production.  

Sift your dry ingredients: Make sure to sift the ingredients before preparing the batter. This is also one of the main reasons; not sifting flour will create heaviness which will cause the pancake to be bogged down and not properly rise.

Balloon whisk: After mixing all ingredients and preparing the batter, balloon whisk the batter. As its name suggests it’s like a balloon-shape; it helps the batter to become airier.

  • 1 1/2 Cups Water
  • Cooking Spray
  • 1 tbsp Chopped bananas
  • 1/2 tbsp Mixed Nuts

  • Blend the cream cheese, eggs, heavy cream, baking powder, and coconut powder in a blender. The mixture should be smooth after blending for 1 minute.
    Add the vanilla extract next, and mix for an additional 15 seconds.
  • Fill the tins with the pancake batter. You may fill your pie pans with 1/4 cup of pancake batter.
  • Put the tin cups in the air fryer. Cook at 400 F for 7-8 mins.
  • Make sure to inspect it after 5 minutes to ensure that it doesn't overcook because different air fryers have varying power and capacity.
