3 medium size potatoes
1 medium size onion
2 tablespoons of breadcrumbs
1 teaspoon salt
1 medium size green onions
1 teaspoon black pepper
1 teaspoon extra virgin olive oil
To make these delicious air fryer potato fritters, begin by peeling and washing. Then grate the potatoes and add them into a bowl filled with cold water. In the same bowl, grate a medium-sized onion, and then drain the water. Squeeze out excess liquid from the grated potatoes and onions using a kitchen towel.
Combine the grated mixture with salt and black pepper.
Take a separate bowl, whisk two eggs and add them along with green onions to the potato mixture. Incorporate 2 tablespoons of breadcrumbs, ensuring all ingredients are well mixed.
Now shape the mixture into rounds and place them in the air fryer basket, gently pressing them down and brushing with olive oil.

Russet potatoes contain high starch content and low moisture while Yukon potatoes contain low starch and have a buttery flavor and they turn out crispier. Not long, just 10 minutes. For more crispiness, slightly increase cooking time by 1-2 minutes and there you go, your potato fritters are ready to be served. Enjoy them hot with your favorite dipping sauce.

- Drain the water from the bowl. And wrap the grated potatoes and onion in a kitchen towel and squeeze the excess liquid out.
- Add the grated potatoes and onion to a clean bowl. Add salt and black pepper and mix well.
- Take two eggs and whisk in a separate bowl. Then add these whisked eggs and green onions to the bowl of potatoes.
- Add 2 tablespoons of breadcrumbs to the bowl and mix all ingredients well.
- Scoop the mixture and add rounds of potato mixture to the air fryer basket. Gently press the potato rounds with a spatula and brush them with olive oil.
- Cook for 400 F for 10 minutes flipping halfway through or until the exterior is nicely brown and crispy.
