In the same bowl, grate a medium-sized onion, and then drain the water. Squeeze out excess liquid from the grated potatoes and onions using a kitchen towel.

- Peel the potatoes using a peeler and then wash them with cold water.
- Grate the potatoes in a bowl full of cold water.
- Grate one medium size onion in the same bowl.
- Drain the water from the bowl. And wrap the grated potatoes and onion in a kitchen towel and squeeze the excess liquid out.
- Add the grated potatoes and onion to a clean bowl. Add salt and black pepper and mix well.
- Take two eggs and whisk in a separate bowl. Then add these whisked eggs and green onions to the bowl of potatoes.
- Add 2 tablespoons of breadcrumbs to the bowl and mix all ingredients well.
- Scoop the mixture and add rounds of potato mixture to the air fryer basket. Gently press the potato rounds with a spatula and brush them with olive oil.
- Cook for 400 F for 10 minutes flipping halfway through or until the exterior is nicely brown and crispy.
